Neck Bone and Potatoes
by Chef Kendra Ingredients 4 pounds neck bones 6 Tablespoon onion soup mix 3 or 4 large potatoes, diced 1 Tablespoon salt 1/2 Tablespoon seasoned salt 1 small onion, large diced 1/2 bell pepper, large diced 1/2 teaspoon garlic powder 1/2 teaspoon black pepper 1/2 teaspoon cayenne pepper Mix seasoned salt, garlic powder, black pepper, cayenne pepper, and onion soup mix in a small bowl. In a dutch oven or large heavy bottom pot spray in a little vegetable oil or cooking spray. Turn heat to medium. Add onions and peppers and saute a few minutes. Add a layer of neck bones and sprinkle on some seasoning blend. Stir. Add another layer and repeat until all neck bones and seasoning is mixed well. Pour in vinegar and stir. Add water, enough to cover neck bones. Bring to boil. Reduce heat to low and cover with lid. Let simmer for 2 or 3 hours or until just tender. Add potatoes and salt, stir in and cook additionally until potatoes are cooked though yet hold their shape. About an additional ½ hour or so. Enjoy. Peace, CK |
