McDonald's McRib Clone
Rib Meat from one of pork spare rib, trimmed
2 or 3 Sesame seed buns
1/2 cup smoky BBQ sauce
1/2 onion, sliced
salt, to taste
pepper, to taste
4-6 dill pickle slices
Prepare a baking sheet with aluminum foil or parchment paper and set aside. Cut rib meat in chunks. In a food processor add rib meat and blend until ground.
Shape 2 or 3 patties into thin oval shapes and place on prepared baking sheet. Place baking sheet in freezer for 1/2 hour. Remove sheet and salt and pepper both sides of meat. Get a nonstick pan over medium heat and let it heat up for about a minute.
Add two patties to pan and cook and brown until meat is just done, flipping once. Remove from heat and turn heat to low.
Add buns to pan and toast lightly. Remove from pan and add patties back to pan and cook in half the BBQ sauce for 1 minute each side.
Place patties on bottom bun, add more sauce if desired. Top sandwiches evenly with onions and a couple of pickles on each sandwich. Add top buns and enjoy.
