Instant Pot Chili
Makes 6-8 servings 1 lb ground beef 1 1/2 Tablespoon olive oil 1 onion, diced 2 teaspoon minced garlic 1 15 ounce can crushed tomatoes 1 15 ounce can diced tomatoes 1 15 ounce can of kidney or black beans, drained 1/4 cup chicken broth 2 Tablespoons Chili powder 2 1/4 teaspoon Cumin 1/2 teaspoon salt 1/2 teaspoon black pepper 1/2 of 15 ounce can of corn, optional 1 jalapeno or serrano chili pepper, diced In a Instant pot or pressure cooker set to saute add oil and ground beef, cook and stir for a couple of minutes. Add in onions and chili peppers and continue to saute. When beef is closed to being browned add the garlic and cook and stir until browned. Add chili powder, cumin, salt and pepper and cook and stir for a minute more. Stir in beans, canned tomatoes, and beef broth. Set Instant pot or pressure cooker for 10 minutes. When the process is complete cover steam spout with kitchen towel and release steam. Once all steam has been released remove lid and serve. |
