Fried Catfish Nuggets
Ingredients 1 lb Catfish nuggets ¼ teaspoon salt Serves 4 Fried Fish Coating 2 ½ cup yellow cornmeal 2 ½ Tablespoons paprika 2 Tablespoons garlic powder 1 Tablespoon onion powder 1 Tablespoon black pepper 1 Tablespoon cayenne pepper 1 Tablespoon dried oregano 1 Tablespoon dried thyme ½ Tablespoon fine sea salt Direction Preheat skillet to 350 degrees Fahrenheit. Mix all coating ingredients in a medium bowl. Pour some mixture in a shallow dish, I use about ½ per pound of fish. Dip catfish nuggets into coating and coat both sides. Fry fish in skillet, turning once. Remove to cooling rack to drain off excess oil. Serve right away. Enjoy.
