Curly Fries
Serves 4-6 2 cups water 1 1/2 cups flour 6 medium potatoes, washed, peeled ¼ cup corn starch 4 Tablespoons Paprika 2 ½ teaspoon salt 1 ½ teaspoon cayenne powder 1 ½ teaspoon onion powder 1 ½ teaspoon garlic powder 1 1/8 teaspoon black pepper Vegetable oil Prepare a cooling rack with a plate underneath or a plate lined with paper towel. Prepare a medium bowl with water. Set aside. Using a spiralizer and spiralize potatoes. Immediately place potatoes in hot water and let them soak in the water for 30 minutes. When the time is almost up on the soaking potatoes prepare the oil for frying and the batter for dipping. Pour vegetable oil into medium pot about 3 inches deep. Turn burner to medium heat. Bring oil up to 375f/190c. In another medium bowl add flour, corn starch, paprika, salt, cayenne powder, onion powder, garlic powder, and black pepper and whisk together well. Strain potatoes and tear into manageable fries. Dip potatoes in batter and shake off excess and place in hot oil and fry 5 or 6 minutes constantly turning with large spoon. They should be golden brown, crispy and cooked through. Remove to cooling rack or plate lined with paper towel and let excess oil drain off for a few seconds. Check for seasoning and add more salt if you like. Enjoy. Peace, CK |
