Serves many
3 cups of Old Fashion Oats
2 cups all purpose flour
1 3/4 cups raisins
1 cup sugar
1 cup light brown sugar
1 cup butter, softened
2 eggs
2 1/2 t vanilla
1 t baking soda
1 t baking powder
3/4 t salt
Preheat oven to 350 degrees. Put the sugars into a stand mixer (you can also use a hand mixer) add the eggs and the butter.
Turn the mixer on to medium and mix until everything is incorporated.
Turn off the mixer then add the flour, and mix the flour on low just until mixed in, then do the same with the oats.
Now you can stir in the raisins.
On a lightly greased baking sheet or a baking sheet with a non stick surface (or silpat) place the dough, two tablespoons for each cookie, onto baking sheet. Bake cookies for 12-15 minutes each.
Remove to a cooling rack and let cool completely before putting them in an airtight container. Do not refrigerate. Enjoy.
