| Cheesy Chicken Pasta Serves 6 1 ½ cups marinara sauce 2 bone skinless chicken thighs or breast, cut into bite size pieces 1 ½ cups raw pasta, cooked according to package directions ½ cup mozzarella cheese ¼ cup Parmesan cheese 2 Tablespoons olive oil 4 colorful mini sweet peppers or 1 bell pepper, chopped 3 cloves of minced garlic Seasonings ½ teaspoon onion powder ½ teaspoon garlic powder ½ teaspoon salt ½ teaspoon black pepper ½ teaspoon of Italian seasoning ¼ teaspoon crushed red pepper In a oven safe large pan over medium heat add olive oil. Let it heat up for 1 minute. Add sweet peppers and stir and cook for 3 minutes, add garlic and cook for 1 minute more. Add chicken, and seasonings. Stir and cook until chicken is done. Stir in marinara sauce, cover pan and reduce the heat to low. Cook for 5 minutes. Remove from heat and sprinkle over cheese. You're good to go or you can set broiler to high, place pan under broiler until the cheese starts melts, and browns here and there. You can stir everything together or serve it with the cheese just hanging out on top. Enjoy. Peace, CK |
