Banana Bread
by Chef Kendra 1 ¾ cups flour 3 very ripe bananas, peeled and mashed ½ cup brown sugar ¼ cup white sugar 1 stick butter, room temperature 2 eggs 2 Tablespoon fresh lemon juice 2 teaspoons vanilla extract 1 teaspoon baking powder 1 teaspoon baking soda ½ teaspoon salt Prepare a loaf pan by buttering and flouring the pan. Preheat oven to 350f or 176c. In a bowl add baking soda, baking powder, salt and flour. Whisk. In the bowl of a stand mixer with the paddle attachment add butter and sugar and mix on medium until color lightens. Add one egg and mix that in, toss in the second egg and mix that. Next add lemon juice, bananas, and vanilla extract. Add flour and mix on low just until mixed in. Add the batter to loaf pan. Bake 50-60 minutes or until a toothpick comes out clean. Let banana bread rest in pan for 10 minutes. Remove from pan to a cooling rack and let it cool thoroughly. |
