1 cup of Almonds
1 cup of sugar
½ cup corn syrup
1 Tablespoon + 1 teaspoon of butter
1 teaspoon baking soda
½ teaspoon of vanilla extract
½ teaspoon of rum
1/8 teaspoon salt
Optional
1/8 teaspoon fine salt to sprinkle over finished brittle
In a microwave safe bowl, preferably a Pyrex type measuring glass, at least 4 cup measure.
Add sugars, and salt. Cook for 4 minutes on high. Take it out and stir in almonds. Cook for another 3 minutes and give it a stir after each minute.
Cook until light golden brown. Pull it out, add the butter, vanilla, rum, and baking soda and stir until its foamy. Pour out onto buttered baking sheet, Silpat or marble slab.
Sprinkle lightly with 1/8 teaspoon of fine sea salt or regular salt if you want.
Let cool, break apart into pieces of your choice and serve. Enjoy.
