1 1/3 cup all-purpose flour
1-1/4 cups buttermilk
3/4 cup fresh or canned pumpkin
2 large eggs
3 tablespoons brown sugar
2 tablespoons butter, melted
1 teaspoon baking powder
1/2 teaspoon teaspoon ground cinnamon
1/4 teaspoon baking soda
1/4 teaspoon salt
Vegetable Oil for waffle maker
Butter and maple syrup, chopped walnuts optional.
Grab a big bowl and add flour, sugar, baking power, cinnamon, baking soda and salt.
In another bowl add pumpkin, eggs, buttermilk, and butter and whisk. When everything is nice and combined add the wet ingredients to the dry ingredients and stir until everything is just moist.
Light brush waffle maker with vegetable oil if desired, and let it heat up according to your waffle makers directions. Cook waffles in waffle maker in batches.
Remove and serve with maple syrup, a pat of butter and a sprinkling of walnuts if you prefer. Enjoy.
