5 or 6 russet potatoes, washed, and diced
1/2 cup mayonnaise
1/4 cup celery, small dice
1/4 cup onion, small dice
1/4 cup green bell pepper, small dice (optional)
3 hard-boiled eggs, peeled and chopped
3 Tablespoon yellow mustard
2 Tablespoons sweet pickle relish
1 Tablespoon Sugar
2 clove of garlic, peeled , rougly chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon smoked paprika
Add potatoes and garlic to a large pot of water and bring to boil over high heat. Once boiling, lower heat to medium low and cook until folk tender, about 20 minutes.
Meanwhile another bowl add onions, bell peppers if using, celery, sugar, mayonnaise, mustard, relish, salt and pepper. Mix well and place in refrigerator.
When potatoes are done drain them, add add them to the dressing. Add the chopped hard boiled eggs. Mix gently but thoroughly. Sprinkle with smoked paprika. Enjoy.
