Potato Latkas
Makes 8-16 Potatoes, peeled, washed and shredded 2 - 3eggs 1 medium onion, peeled and shredded 2 cloves minced garlic 2 Tablespoons flour ¾ teaspoon salt 1/8 teaspoon black pepper vegetable oil Directions In handfuls, over the sink, squeeze out all the excess moisture from potatoes and onions and add to a large bowl. Make sure you get as much as the moisture out as you can. Next get a none stick pan over medium heat. Pour 1 inch of oil into pan. While the oil is heating up add the flour, garlic, salt, and pepper to the bowl. Add in 2 eggs and mix well. If the mixture is to dry add the last egg. You can make these small or large. If you want them small use a 1/8 measuring cup. If you want them bigger use ¼ in cup. Using your measuring cup scoop mixture and gently turn out into pan. Flatten with a spatula. Fit 2 or 3 in a pan and fry in golden and crispy. Flip and repeat on other side. Remove to cooling rack. Cook the rest of the latkas and serve right away. This are amazing with a drizzle of sour cream and chives sprinkled over the top. Enjoy. Peace, CK Note: Shred potatoes and onions with a cheese grater on with a food processor. |
