Another ¼ cup for topping
1 cup sugar
3/4 cup all purpose flour
1 cup chopped, pecans, plus ¼ cup more for topping
6 Tablespoons butter (1/2 a stick)
2 large eggs
1 teaspoon vanilla
1 teaspoon cocoa powder
1/4 teaspoon salt
7 ounces salted caramel sauce
Preheat oven to 350 degrees Fahrenheit. Line an 8 by 8 or a 8 x 10 baking sheet with parchment paper. Melt ½ cup of the chocolate chunks and butter in microwave safe bowl, 30 seconds at a time, stirring after each blast until fully melted.
Add sugar and cocoa powder and stir. Add one egg at a time and stir in completely before add the next egg. Stir in the flour and salt and 1 cup of the pecans. Stir in 3/4 cup chocolate chunks. Pour into prepared pan.
Bake for 15-20 minutes or until toothpick comes out clean, Take care not to over bake. Heat caramel in the microwave according to package directions or with the top off just until pour-able. Pour warm caramel sauce over brownies and sprinkle with reserved pecans and chocolate chunks.
Serve warm or refrigerate for about a hour so the caramel has time to set up. Enjoy.
