Nacho Cheese Sauce
Makes about 1 1/2 cups
1 c buttermilk
1/2 c heavy whipping cream
2 1/4 oz Monterey Jack and Colby Blend, shredded
1 Roma tomato, diced
3 T diced onion
3 T butte, divided
2 T flour
2 T pickled jalapeno, diced (from a jar)
1 T vegetable oil
1/4 t turmeric
1/4 t red pepper flakes
I/4 t paprika
1/8 t black pepper
1/8 t salt
1 diced jalapeno (optional garnish)
Add 1/2 of the butter to a sauce pot and melt on low.
Once melted add pickled jalapeno, tomato, onion, turmeric, red pepper flakes, paprika, salt, pepper, and cook until the onions are soft.
About 10 minutes.
Whisk in flour and remaining butter and whisk for 2 minutes.
Raise temperature to medium and whisk until nacho cheese sauce starts to boil.
Remove from heat and blend until smooth. Add oil and blend that in. Serve warm, and sprinkle on some diced jalapeno is you like. Serve with tortilla chips. Enjoy.
