How to make Fried Chicken
Ingredients
8 – 10 pieces of chicken (whatever pieces you enjoy)
2 eggs
¼ cup water
1/2 cup hot sauce
2 cups self-rising flour
1 teaspoon pepper
Seasoning blend (recipe below)
1 teaspoon of black pepper
2 cup vegetable oil (for frying)
Sea salt (sprinkling at the end)
Chop and some clean your chicken pieces and seasoning both sides with a seasoning blend. I use a adapted version of Paula Deen’s house seasoning. My adaption is that whenever I make the seasoning blend I add onion powder and black pepper (recipe for both is in the last post) Put the oil in a large pot. We want to get our oil over medium heat; we’re going to fry the chicken right around 350 degrees.
Mix eggs, water and hot sauce in a bowl. Mix flour and black pepper in a bowl.
Get your frying station together your seasoned chicken, your egg mix and your flour in a neat little row like soldiers. Make sure you heat your oil to 350 degrees. You don’t have to worry about maintaining this temperature; it just needs to be that temperature when you start. Don’t crowd the pan with chicken; it’s cool to cook your chicken in batches. Just bring the back up to 350 degrees before adding a new batch.
Fry chicken for 14-16 minutes flipping halfway through. Remove chicken to a rack or on a bed of paper towels. I and lightly salt it with sea salt or regular salt, either way is good. Let it cool for 10 minutes before digging in.
