How to Make Chicken Parmesan
Serves 6
3 Chicken breast slice down the middle lengthwise
1 cup pasta sauce (below)
¼ cup Parmesan cheese
¼ cup mozzarella cheese
¼ cup olive oil
½ cup Italian bread crumbs
½ cup Panko bread crumbs
2 eggs
2 Tablespoons milk
1 Tablespoon Italian seasoning
¼ teaspoon salt
¼ teaspoon black pepper
Preheat Oven to 425 degrees
Mix bread crumbs and seasonings in a shallow dish. Mix egg with milk and whisk to combine. Lightly salt and pepper chicken. In a pan over medium heat, pour in the olive oil. Dip chicken in egg mixture, then in the breading. Make sure you coat both sides really well.
Place chicken in the pan and proceed to brown both sides. You might have to do this in two batches, don’t over crowd the pan. Meanwhile brush baking sheet with some olive oil. After the chicken has lightly browned, move the chicken onto the baking sheet. Cover each piece of chicken with equal amounts of sauce.
Now cover each piece of chicken with equal amounts of both cheeses. Sprinkle on some Italian seasoning if you wish. Bake for 15 to 20 minutes, and serve hot.
Quick and Easy Pasta SauceThis sauce makes enough for 4 servings of Chicken Parmesan, or to cover two pizzas.
Oh, yeah I don't have to tell you that a quick and easy pasta sauce is not pretending to be Nana's 8 hours, simmering on the back of the stove meat sauce, do I? Didn't think so. lol It's very good, especially for Chicken Parmesan and on pizza though.
Ingredients
1 cup of crushed tomatoes (canned)
2 Tablespoons chicken stock
3 Tablespoons tomato paste
1 Tablespoon olive oil
1 teaspoon Italian seasoning
1 teaspoon crushed red pepper flakes
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon sugar (or to taste) You want to balance out the acidity
Toss all this stuff in a small pot, bring it to a boil, cover pot, reduce heat to the lowest setting and cook for 5 more minutes.
