Serves 4
4 russet potatoes, peeled, diced 1/2 inch
1/2 c of diced onions
1/2 c diced bell pepper
2 1/2 T vegetable oil
1 1/4 t paprika
1/4 t garlic powder
1/2 t black pepper
1/2 t salt
Except oil, toss all the stuff in a bowl and mix well.
Heat oil in nonstick pan for about 1 minute over medium low. Add the potato mixture and cover pan for 8 to 10 minutes.
Flip potatoes, cover and cook another 8 -10 minutes. Check to see if they are done, and for seasoning, add more salt if you want.
You might have to cook your potatoes a couple of more minutes depending on your brownness preferences. Enjoy.
