Grilled Potato Slices
Serves 4 Ingredients 2 - 2 1/2 cups chicken stock (you want enough to cover the potatoes while they boil) 2 Large russet potatoes, wash potatoes, peeled and sliced 1/2 inch thick 1 Tablespoon sugar (optional) 2 teaspoon dried rosemary 1/4 teaspoon black pepper Olive oil for brushing In a medium saucepan over high heat add chicken broth, dried rosemary and sugar to saucepan and bring to a boil. Once water starts to boil add potato slices, bring back to a boil reduce heat to low and cook for 15 - 20 minutes. You want the potatoes just done, but not falling apart. Remove potatoes from pot onto a plate on a single layer and let the potatoes cool to room temperature. Preheat an indoor or outdoor grill. Once potatoes are cooled brush both sides of potatoes with olive oil. Place potatoes slices on grill and grill until they develop beautiful grill marks, flipping only once. Remove to plate and sprinkle with a little fresh rosemary, salt and pepper. Enjoy. Peace, CK |
