Funnel cake is not just for kids. Seriously, I get on of these anytime I’m a an carnival or festival that has them hot and dusted with plenty of powdered sugar. Making these things at home really couldn’t be much easier. To make these you don’t have to go out and buy any special ingredients. However, to make these things much easier to make I highly suggest a funnel and squeeze bottle. Both you can cop at a dollar store or Walmart for about a buck each.
Fair Grounds Funnel Cake
Makes 6-8
3 c flour
2 eggs
1 c milk
1 c water
¾ c powdered sugar
5 T sugar
1 T baking powder
1 t vanilla extract
1/8 t salt
Vegetable oil
Add all purpose flour to a big bowl. Add the salt, regular sugar and baking powder. Mix well with folk and set aside. In another bowl add egg and whisk. Add the water, milk and vanilla. Add the flour mixture to the egg mixture. Use an electric mixer to blend just until combined.
Cut off the tip of a squeeze bottle and stick a small funnel inside. Add ½ cup of batter at a time to squeeze bottle. That’s just enough for one funnel cake.
Preheat a pan with deep sides or a large pot with 4 inches of vegetable oil. Heat oil to 375. Pour in the batter and spread it around and on top of itself. Brown it on one side, flip it and brown it on the other.
This will take about 1-2 minutes per side. Remove from pan to a cooking rack. Let it cool for 1 minute.
Add powdered sugar to a small strainer and sprinkle powdered sugar over these the funnel cakes. Serve warm. Enjoy.
