Easy Spanish Rice
Serves 2 1 cup chicken broth 3/4 cups white rice 1/2 cup thick salsa 2 Tablespoons vegetable oil 2 Tablespoons chopped red onion 1/2 Tablespoon butter 1/4 teaspoon salt 1/4 teaspoon black pepper Optional Garnish with sliced cherry tomatoes, and sliced green onion if you wish. Add oil and butter to large pot over medium heat. Let the oil and butter heat up for about 30 seconds then add the onions to the oil/butter mixture. Cook and stir the onions until they become translucent. About 3-5 minutes. Add the rice to the pot and stir and cook the rice until the rice starts to develop some lightly toasted color. Next add the salsa, chicken broth and salt and pepper. Stir well and add the top. Reduce heat to low and cook for 18-22 minutes. You want the rice fully cooked and liquid adsorbed. Fluff with folk and serve. Sprinkle on garnish if you want and enjoy. Peace, CK |
