EASY SCALLOPED POTATOES

Easy Scalloped Potatoes
Serves 4 Ingredients 2 pounds russet potatoes, scrubbed, peeled 1 medium yellow onion 1 1/2 cups heavy whipping cream 1 teaspoon minced garlic ½ teaspoon salt ¼ teaspoon pepper ¼ teaspoon dried rosemary Preheat oven to 350 degrees Fahrenheit Using a paper towel with a little oil on it, grease 8 x 8 baking dish. You can also just use cooking spray to lightly spray baking dish. Mix salt, pepper and rosemary together in a small bowl. Using a Mandoline Slicer or food processor slice potatoes and onions thinly. Layer a third of the onions, garlic, and potatoes on the greased baking dish. Sprinkle with 1/3 of the rosemary seasoning mix. Pour over the top 1/3 of the cream. Repeat two more times. Bake uncovered for 1 hour or until the potatoes are cooked through and are pleasantly golden browned. Serve right away. Enjoy. Peace, CK |
