3/4 cup orange marmalade
5 serrano chilies thinly sliced
1 Tablespoon vegetable oil
1 cup beef broth/ divided
2 teaspoon corn starch
1 1/4 teaspoon soy sauce
zest from 1 orange
2 lbs pound of top loin steak, or flank steak, sliced into thin strips
1/4 teaspoon of pepper
1/4 teaspoon of salt
1/4 cup flour
For the sauce, in a small sauce pan pour in oil and saute garlic for 1 minutes over medium heat. All the rest of the sauce ingredients to the pot except for 1/2 cup of beef broth and corn starch. Bring to a boil, reduce heat and simmer for 7 minutes.
Add corn starch to 1/2 cup of beef broth and stir well, add to sauce. Turn sauce back up to medium and bring to boil. Reduce heat and simmer until sauce thickens. About 10 more minutes.
In a non stick pan over medium heat pour in vegetable oil, about 1/4 inches up the pan. Let it heat for 3 or 4 minutes. Place beef in a medium bowl and pour in flour.
Coat beef well with flour shaking off excess, now fry beef in oil until it starts to become crispy. Remove beef from pan in a slotted spoon onto a plate, remove oil from pan. Add beef back to the pan over lowest heat, pour over sauce to coat and warm. It’s now ready to serve over rice or noodles. Enjoy.
