Fish Sticks
Serves 4 12 oz tilapia, cod or haddock cut in 3 or 4 inches by ½ inch 1 cup flour 1 1/2 cup panko bread crumbs 2 egg whites, lightly beaten 1 lime, sliced into 8 wedges ¼ teaspoons seasoned salt ¼ teaspoon salt ¼ teaspoon old bay seasoning ¼ cayenne pepper vegetable oil for frying Mix old bay, salts, and pepper together in a small bowl. Season fish with seasoning well. Add flour to a shallow bowl. Add egg whites to a shallow bowl. Add panko bread crumbs to a shallow bowl. Dip fish pieces in the flour, then egg whites and finally the panko and set them on a plate. Once all are done place fish sticks in freezer for 15 minutes. Right before removing them from the freezer add oil to a large nonstick pan about 1 /2 inch up the pan. Turn heat to medium. Prepare a cooling rack. Cook fish in batches on both sides until golden brown. Remove to cooling rack. Enjoy. Peace, CK |
