Crescent Rolls
Makes 3 ¼ cups flour 1 cup plus 2 Tablespoons water 3 Tablespoons sugar 2 Tablespoons butter ¼ cup additional butter, softened 1 egg 2 teaspoons instant yeast ½ teaspoon salt 1 Tablespoon melted additional for brushing over baked rolls In a bowl of a stand mixer with dough hook attachment add 2 Tablespoons butter, yeast, water, egg, sugar. And mix ingredients well on medium. Slowly add flour, then mix in salt. Run mixer until the edge pull away, about 5 or 6 minutes. Lower bowl and remove dough hook. Shape dough into a ball right in the bowl and cover with a tea towel. Let rise until doubled in size. This depends on how hot your kitchen is, etc but look at anywhere from 45 minutes to 1 ½ hours. Prepare a baking sheet by lining it with parchment paper. Gather a cutting board and a tiny amount of bench flour. Light flour hands and remove dough from bowl and move it to cutting board. Roll dough into 12 inch circle and spread with softened butter. Using a pizza cutter cut the dough into 12 triangles. Roll up them up from the wide end. Place each piece on baking sheet, cover again with tea towel and let rise again for another ½ hour. Preheat the oven to 350 degrees. Remove tea towel and bake for 15 to 20 minutes. When golden brown on top remove from oven and brush over melted butter. Enjoy. Peace, CK |
