Chocolate Chip Oatmeal Cookies
Makes about 42 1/2 cup butter, softened 1/2 cup packed light brown sugar 1/4 cup white sugar 1 egg 2 teaspoons vanilla extract 3/4 cup all-purpose flour 1/4 teaspoon baking soda 1/2 teaspoon salt 1 3/4 cups oats 3/4 cup semisweet chocolate chips Directions In a bowl add baking soda, flour, and salt. Set aside. In the bowl of a stand mixer cream sugars and butter. Add one egg to the creamed butter, blend in completely then mix in the other egg. Mix in vanilla extract. Add baking soda, flour and salt mixture to mixer bowl and blend in. Blend in oat and finally stir in chocolate chips. Cover bowl and refrigerate cookie dough for 2 hours. Preheat oven to 325 degrees when you have 15-20 minutes left before pulling cookie dough out of the refrigerator. Drop cookies using 1 Tablespoon measure onto baking sheet 2 inches apart. Bake for 12 -15 minutes (ovens vary of course) Remove cookies to a cooling rack to cool. Enjoy. Peace, CK |
