by Chef Kendra Nguyen 2 chicken breast, boneless, skinless, boneless, 1 ½ cups frozen broccoli, thawed and chopped ¾ cup Mozzarella cheese or mozzarella provolone blend 1/2 cup Parmesan cheese 2 oz Cream cheese 1 egg, beaten Ritz crackers, ¾ cup crushed 12 - 14 ¾ cup pasta sauce 2 teaspoons vegetable or olive oil Preheat oven to 370 degrees Fahrenheit In a medium bowl mix 1/3 of the parmesan cheese, mozzarella cheese, cream cheese and broccoli in a bowl, set aside. In another medium bowl mix add 1/3 more of the parmesan cheese, egg and cracker crumbs and mix well. Place have the broccoli mixture on each chicken breast and roll up. Secure with two toothpicks. Add even amounts of the cracker crumbs mixture to each chicken breast. Pour oil in bottom of baking dish and rub making sure it’s coated well. Add chicken rollups and place baking dish and bake until is done. Heat up pasta sauce and spread on chicken, sprinkle with remaining parmesan cheese. Serve right away. Enjoy. Peace, CK |
