Chicken Fried Rice
Serves 4 2 cups Leftover, cold rice 1 cup cooked chicken, diced ¾ onion, chopped 2 Tablespoons soy sauce 1 egg 1 Tablespoon canola oil 1 Tablespoon butter 1 Tablespoon water ¼ teaspoon sesame seed oil ¼ teaspoon black pepper Beat eggs and water together. In a large nonstick pan over medium heat add butter. When butter is almost melted reduce heat to low. Add eggs and scramble until done. Remove from heat and return pan to medium. Pour in oil, add onions and cook onions until soft. Add rice, soy sauce, black pepper and sesame seed oil and mix well. Cook and stir an additional 5 minutes. Serve right away. Enjoy. Peace CK |
