Chicken and waffles slidersChicken and Waffles are awesome but when you turn them into sliders all I can say is heck yeah! It's easy to get creative with the topping and I like to do stuff like this in a "bar" method. Lay out all kinds of delicious toppers and let everyone have at it.
I like to whip up the marinade and let them do their thing overnight in the fridge. Then all I have to do is fry'em up and hook up the simple waffles that go with them. |
Chicken and Waffles

Makes 12 -14 Sliders
1 pound Chicken breast cut into 2 ½ by 2 ½ inch pieces
1 ½ cups all-purpose flour
1 cup buttermilk
¼ cup whole milk
2 eggs
2 Tablespoons cayenne pepper
1 Tablespoon garlic powder
½ Tablespoon onion powder
1 teaspoon dried parsley
1 ¼ teaspoons kosher salt
1/2 teaspoon ground black pepper
1/2 teaspoon d thyme
Peanut Oil for frying
Prep
In a large zip top bag add buttermilk, cayenne pepper, garlic powder, onion powder, dried parsley, kosher salt, ground black pepper and thyme. Add cut up chicken to the bag and let out as much air as you can. Seal bag and refrigerate six to twelve hours.
When the chicken has finished marinating grab a bowl and add eggs and ½ of the whole milk and whisk thoroughly. In another bowl add other half of whole milk to flour and stir well.
Frying
Get a large pot over medium heat and add 2 inches of oil. Bring temperature up to 350 degrees. Pull chicken out of marinade, dip in egg mixture, then in flour and set on a plate. Do all the pieces before cooking.
Add some of the chicken pieces. Cook the chicken in as many batches as you need to so you don’t crowd the pan, bring the temperature back up after each batch. Flip the chicken once and cook each side until deep golden color. Remove to cooking rack. You can place in a 170 oven to keep warm while you make waffles.
Waffles

2 ½ Tablespoons sugar
2 eggs
1 Tablespoon baking powder
1 ¾ cups milk
1/3 cup vegetable oil
½ teaspoon vanilla extract
Mix the milk, eggs, vanilla extract and oil together in a pourable measuring cup. Mix the flour, sugar, salt and baking powder together in a large bowl. Pour the wet ingredients into the dry ingredients and mix until combined. Cook according to your waffle makers directions. Break waffles along lines into fourths or if you have a waffle maker that doesn’t do the round fourths thing, just cut waffles to be slightly larger than the chicken.
Putting the sliders together
On a plate place one waffle piece down, add a chicken slider, top with whatever you want to top them with. Add the a top waffle piece and secure with toothpick. Enjoy!
