Chicken and Rice Soup
serves 4 Ingredients 4 cups chicken broth 2 cups water 1/3 cup white rice 3 skinless, boneless chicken breast thighs, cut into bite size pieces 1 carrot, diced 1 celery stalk, diced 1 cup frozen peas 2 cloves garlic, minced 1/2 teaspoon dried parsley ¼ teaspoon ground pepper salt to taste Get a large pot over medium heat. Add rice, broth and water and bring to boil. Add chicken, turn the heat to low and cook for 15 minutes. Add the rest of the ingredients except salt to the pot and stir well. Simmer for 15 more minutes or until vegetables are tender. Check seasoning. Enjoy. Peace, CK |
