Ingredients:
5 pounds of chicken wings
Salt 1 teaspoon
black pepper 1/2 teaspoon
garlic powder 1/2 teaspoon
flour 2/3 cup
Oil for frying
Store bought or homemade BBQ sauce
Season chicken with salt, garlic powder and black pepper. Fry the large portions with the large portions and smaller portions together for even cooking. Discard tips or freeze in zip top bag and use them for stock.
Pour oil into a large pot and bring oil up to 350 degrees. Dip chicken into flour and put in pot. Do this in batches not to over crowd the pot. Flip chicken when once for even cooking. It will take about 7 to 8 minutes per side.
Make the sauces listed below. Divide chicken by three dipping them into each of the sauces. Use your favorite bottled BBQ sauce for the BBQ wings.
Hot Wing Sauce
½ cup hot sauce
½ cup melted butter
1/2 teaspoons black pepper
1/2 teaspoons garlic powder
Mix in a bowl and toss hot chicken in it. Coat the chicken well. Serve hot.
Orange Chicken Sauce
1/4 cup Ketchup
1/4 cup plus 1 teaspoon Honey
1/8 teaspoon Garlic powder
1 teaspoon Vegetable oil
Juice of ½ an orange
Orange Zest from one orange
2 Tablespoons White vinegar
1/2 teaspoons Sesame seeds (optional)
Mix in a bowl and toss hot chicken in it. Coat the chicken well. Serve hot. Enjoy.
