Sweet Potato Pie
1 unbaked 9 inch pie crust (try CK's pie crust)
1 ¼ large sweet potato
1 cup plus an addition 2 Tablespoons sugar
½ cup salted butter, softened
½ cup whole milk
1 ¼ teaspoon vanilla extract
¼ teaspoon ground nutmeg
½ teaspoon ground cinnamon
Preheat oven to 350 degrees Fahrenheit or 176 celsius.
Rinse and pierce sweet potato with a paring knife a couple of times. Put on microwave save plate and microwave on high until soft. Remove, and cut.
Scoop up flesh into a large bowl. Add butter and mix well with electric hand mixer.
Add rest of ingredients and mix well, scraping down the bowl from time to time.
Pour mixture into pie plate and bake in preheated oven for 1 hour. Remove from oven. It'll look puffy at first but deflate as it cools. Let cool completely before serving. Enjoy.
