Super Quick Pie Dough
Makes 1 single crust pie dough
1 ¾ cup unbleached all purpose flour
¼ cup ice water
1 ½ stick of butter, cut into cubes, very cold
1 ¼ teaspoon sugar
¼ teaspoon fine sea salt or regular salt
In a food processor add the flour and salt and blend to mix ingredients. Add half the butter and pulse several. Then add half the ice water and pulse several more times.
Add the remainder of butter and water and mix on low until dough just comes together and pulls away from the edges of the food processor. Lay out some plastic wrap to put the dough onto. Remove dough from food processor and form into a ball in your hands. Place dough on plastic wrap and flatten dough into a disk with your hands.
Wrap dough in the plastic wrap and refrigerate for ½ hour.
Remove to a cutting board with a dusting of flour. Dust rolling pin with flour. Sprinkle a light dusting on top of pie dough. Roll out dough and use in recipes. Enjoy.
