Stuffed Peppers
Serves 2
4 bell peppers, washed, tops cut off, core, ribs, seeds removed
8 c water
1 c pasta sauce
1/2 lb ground beef
1/2 c cooked rice
1/2 c shredded mozzarella cheese
3 T chopped onion
1 T Olive Oil
1/2 t seasoning salt
1/4 t black pepper
Preheat oven to 375 degrees. In large pot pour in water and bring to a boil. When it’s boiling add the peppers and cook for 10 minutes. Drain peppers and place on 8 by 8 baking dish. Set aside. In frying pan over medium low heat cook ground beef and onion until beef is just brown, and the onions are soft. Drain off fat. Add onions, seasoned salt, pepper and olive oil. Cook for a few minutes making sure everything is mixed well. Add the rice and the half the tomato sauce. Stir well. Stuff waiting peppers evenly with stuffing mixture. Pour over remaining sauce equally on top of peppers. Cover baking dish with foil and bake for 45 -55 minutes. Remove foil and bake for 10 more minutes. Add cheese, turn off oven and leave in oven until cheese melts. Serves hot. Enjoy.
