Sick Of Winter Peach Pie
2 28 oz cans of peaches, drained
¼ cup super plus additional 2 Tablespoons sugar
3 Tablespoons butter
2 Tablespoons brown sugar
1 Tablespoon flour
1 teaspoon vanilla extract
1/4 teaspoon fine sea salt or regular salt
1/4 teaspoon cinnamon
Crumb topping (recipe below)
1 Pie dough store bought or Super Quick Pie Dough (recipe below)
Prepare the crumb filling (recipe below). Prepare the pie dough (recipe below). Preheat oven to 375 degrees Fahrenheit. In a medium size sauce pan over medium low heat add all the pie filling ingredients to pan and stir well. Bring mixture to a boil stirring occasionally. Once it starts to boil reduce heat to low and cook and stir for an additional 10 to 15 minutes.
Let filling cool completely. Grab your pie dough from the fridge, or can or wherever, once the filling has cool, roll it out and place in pie plate. Cut off excess and crimp edges if desired.
Spoon filling into crust, top with crumb topping and bake for 30 – 45 minutes. Bake pie until the crust is golden brown and the crumb topping is also golden brown. Let cool, serve. Enjoy.
½ cup all purpose flour
½ cup rolled oats
½ cup sugar
¼ cup cold butter, cut into cubes
Add all ingredients into a food processor and pulse until desired consistency. I like my like coarse sand.
Super Quick Pie Dough
1 ¾ cup unbleached all purpose flour
¼ cup ice water
1 ½ stick of butter, cut into cubes, very cold
1 ¼ teaspoon sugar
¼ teaspoon fine sea salt or regular salt
In a food processor add the flour and salt and blend to mix ingredients. Add half the butter and pulse several. Then add half the ice water and pulse several more times. Add the remainder of butter and water and mix on low until dough just comes together and pulls away from the edges of the food processor.
Lay out some plastic wrap to put the dough onto. Remove dough from food processor and form into a ball in your hands. Place dough on plastic wrap and flatten dough into a disk with your hands.
Wrap dough in the plastic wrap and refrigerate for ½ hour. Remove to a cutting board with a dusting of flour. Dust rolling pin with flour. Sprinkle a light dusting on top of pie dough. Roll out dough and use in recipes.
