ingredients. As a crowd pleaser you can rarely go wrong with Pasta and Sausage. Use your own homemade sauce, my Easy Pasta Sauce, or your favorite jar stuff.
Rigatoni with Italian Sausage and Peppers
5 Italian Sausages, skinned removed
3 1/2 c rigatoni, cooked to package directions (measure before cooking)
2 1/2 c Pasta sauce, your favorite brand
2 cloves garlic minced
½ bell pepper, diced into ¾ inch pieces
3 T Parmesan cheese, grated
1 T Italian flat leaf parsley
¼ c olive oil
¼ t salt
¼ t black pepper
¼ t red pepper flakes
Note: You can cut the sausage before cooking.
In a large pan over medium low heat add 1 T the oil. Add sausage and cook on all sides and until sausage is done. Remove from pan.
Add the rest of the oil and the bell peppers. Cook and stir bell peppers around until just soft. Add garlic and stir. Meanwhile cut sausage into bite size pieces.
Add to the peppers and cook and stir for one more minute. Add the pasta sauce, salt, pepper, parsley and red pepper flakes. Stir that around, lower the heat and cook for 5 minutes.
Add sauce to cook pasta and mix well. Sprinkle with Parmesan cheese. Enjoy.
