pumpkin french toast sticks

 ​Pumpkin French Toast Sticks
Serves 8

8 thick slices of sturdy bread (cut into 1 inch strips)
1/3 cup milk
¼ cup Canned pumpkin 
2 Eggs
½ Tablespoon butter
½ Tablespoon vegetable oil
½ teaspoon ground pumpkin pie spice
½ teaspoon ground cinnamon (optional)
1/8 teaspoon ground ginger (optional)

Cinnamon Sugar
¼ cup sugar
1 teaspoon ground cinnamon

In a blender mix cinnamon, pumpkin pie spice, ground ginger, milk and eggs. 

Pour into a shallow dish.

In another bowl with the cinnamon with sugar with a folk.

Get a large pan over medium low heat. Add the butter and oil to pan. Note this works great in a nonstick pan using cooking spray. 

Stir butter in to the oil with a spatula until blended. Dip each bread slices into egg and pumpkin mixture then place in pan. 

Don't over crowd the pan. 

Once the french toast sticks are golden brown and toasted flip and toast the other side. Remove and dip into cinnamon sugar immediately. 

Repeat with remaining french toast sticks. Serve right away. Enjoy.
