Makes 8
3 ½ All-purpose flour
1 1/2 cups water
1 1/2 teaspoon olive oil
1 teaspoon sugar
3/4 teaspoon salt
2 1/4 teaspoons yeast
Prepare a baking sheet with parchment paper or silpat.
In bread machine add water, oil, ½ flour, salt, the rest of the flour, sugar and yeast. Set bread machine to dough cycle.
When cycle is completed cut dough into eight equal pieces and shape into rounds, cover with clean kitchen towel or tea towel and let dough rest for 15 minutes.
Roll each ball out to 6 to 8 inches. Keeping dough that you are not currently working on under a kitchen towel or tea towel so they don’t dry out.
Place 2 rolled out rounds on prepared baking sheet and bake in a 400 degree preheated oven for 4 or 5 minutes. Dough will puff up in the oven, remove to a cooking rack for 5 minutes then place in tea towel to prevent from drying.
After all the rounds are baked and cooled you can store transfer to a large zip top bag.
You can slice you pitas and stuff them with filling in the pocket that forms or place fillings on top and fold over. It’s up to you. Enjoy.
