Pasta with Shrimp and Scallions
Serves 4 – 6
1 lb. medium shrimp, deveined tail removed and cleaned
8 oz frozen, thawed and squeezed pretty dry spinach
4- 5 scallions, cleaned and sliced into 2 inch pieces also labeled green onions
¾ lb. bow tie pasta
¾ c heavy whipping cream
2 T butter
1 T vegetable oil
¼ t salt
¼ t black pepper
Zest of 1 lemon (optional)
Parmesan Cheese (optional)
Cook pasta according to package directions. In a non-stick frying pan over medium heat add the butter and oil.
Let that go until the butter melts. Add scallions; stir around until coated. Add salt and pepper. Cook until color develops on the scallions and they have softened some.
Add the shrimp and cook until the shrimp turns pink. Add cream and spinach and zest if desired. Cook and stir until heated through. Add to drained pasta and mix well. Sprinkled over some parmesan cheese over the top if you like. Serve Shrimp with Scallions Pasta right away. Enjoy.
