Stuff Seen In Video (affiliate links) Mainstay Loaf Pan AmazonBasics Nonstick Carbon Steel Baking Bread Pan Silicone Spatula | No Bake Oatmeal Bars Makes 6 1 ½ cup Quaker Quick 1 Minute Oats ½ cup plus 1 additional Tablespoon semi sweet chocolate chips ¼ cup creamy peanut butter ¼ cup brown sugar 1 stick of butter ¾ teaspoon vanilla extract 1/8 teaspoon sea salt Line a loaf pan with foil, make sure you have foil tall on long side for pulling out later. Set aside. In a medium saucepan over medium heat add brown sugar, butter and salt and stir off and on until sugar butter is melted and sugar is dissolved. Add oatmeal and butter and mix in well. Reduce heat to low and stir and cook for 4 minutes. Add half the mixture to loaf pan in an even, flat layer. Leave the rest in the pan for now. Add peanut butter and semi sweet chocolate chips to a small microwave safe bowl and melt together in 30 second intervals. Remove 1 Tablespoon of chocolate peanut butter mix to a small zip top bag and snip a tiny, tiny piece out of one corner. Pour the rest of the chocolate peanut butter over oatmeal mixture in the loaf pan. On top of that add the remaining oatmeal mixture. Using the zip top bag with chocolate peanut butter, drizzle chocolate on top of the bars. Cover loaf pan with plastic wrap and refrigerate for 4 hours. Remove from fridge, pull out oatmeal brink with the edges of the foil. Peel off foil and place oatmeal bar brick on cutting board. Slice into 6 equal bars. I keep extra bars individually wrapped in plastic wrap in the fridge for up to a week. Note if you want to add raisins mix them into the oatmeal before spreading first layer in loaf pan, after the cooking process is complete. NOTE: (Correction, in video I said instant Oatmeal. The recipe calls for Quaker Quick 1 Minute Oats.) |
