Lemon Cake
1 1/2 cup of cake flour + 3 level T more cake flour
1 c sugar
2 eggs
1 stick butter
1/4 c milk
1/4 c heavy whipping cream
2 T lemon juice
1 t baking powder
1/4 t salt
zest of 1 lemon
Lemon Glaze
1/2 c powdered sugar
Juice of 1/2 lemon
Preheat oven to 335 degrees. Prepare a loaf pan by buttering and flouring it.
Add sugar and melted butter to a large bowl and mix until combined with electric mixer. Add eggs, lemon and zest and mix again. Next add flour, baking powder, and salt and mix again.
Now add the milk and cream and mix just until combined. Pour into prepared pan and bake for 1 hour. Check earlier than that, ovens vary. The cake is done when a toothpick comes out clean.
Let cake relax in pan for 5 minutes, tap pan on counter and remove cake from pan to a cooling rack. Cool for 1 hour. To make the glaze, mix the glaze ingredients in a bowl with a fork or whisk. Enjoy.
