| Cozy and Easy Hot Cocoa 1 serving 1 cup of milk 3 teaspoons sugar 2 teaspoons unsweetened cocoa powder 1/8 teaspoon cinnamon 1 pinch salt 1/2 teaspoon vanilla extract Mix the cocoa power and a couple of Tablespoons of the milk with a folk or small whisk. You want to get it smooth as possible. Next mix in cinnamon, vanilla extract, salt, and the sugar. Microwave you milk in a mug until it's hot, this will take about 1 minute in a 1000 watt microwave. Watch this because if you let it go too far it'll bubble over and you'll be cleaning up a mess. You can also just warm the milk in a small saucepan but really, why dirty another pot. However if making more than two servings of this recipe a saucepan is the really the way to go. Now pour the cocoa mixture into your cup and give it a robust stir. Top with sweetened whipped cream, canned whipped cream, chocolate bits, cinnamon sticks, cool-whip, marshmallows or whatever your heart desires. My Easy Chocolate Sauce is below if you would like a drizzle over the top of your hot cocoa. Easy Chocolate Sauce ½ cup sugar + additional 1 T sugar ¼ cup unsweetened cocoa powder ¼ cup water 1 ¼ teaspoon quality vanilla extract 1 pinch salt In a saucepan off heat add the sugar, cocoa powder, and salt. Using a folk or whisk, whisk together well. Pour in the water. Move saucepan to stove and get pan over medium low heat. Whisking off and on until the mixture starts to boil. As soon as it starts to boil give it a final whisk and pour into a heat proof bowl. It'll thicken as it cools. You can store in refrigerator in a airtight container for a couple of weeks. Use over ice cream, or in milk, and of course a drizzle or two over hot cocoa. Enjoy. Peace, CK |
