Serves 4
1 big eggplant, sliced, 1/4 in thick
1/4 cup of butter, melted
1 t olive oil
3/4 t Italian seasoning
1/2 t garlic powder
1/4 t black pepper
salt to taste
In small bowl mix butter, Italian seasoning, garlic powder and black pepper. Set aside. Sprinkle salt to taste over both sides of eggplant slices.
Heat grill to medium and lightly brush with olive oil. brush one side of eggplant slices with seasoned butter and place buttered side down on grill.
Grill for 5 minutes, brush seasoned butter on top of eggplants and flip, cook another 5 minutes. Serve right away. Enjoy.
