Gator Boy Nuggets or Gator Boy Sandwich
Serves 4
1 lb gator cut in bite sized chunks
1 1/2 cups flour
1 /2 c butter milk or 1/2 c whole milk mixed with 1/2 t vinegar let sit 5 minutes
2 T hot sauce
½ t seasoned salt
1/8 t cayenne pepper
1/8 t ground black pepper
Vegetable oil, enough to go ½ up a pot
Ranch dressing for dipping
Gator Nuggets
In a big bowl mix buttermilk with hot sauce. Season gator with seasoned salt, and peppers. Add gator to buttermilk. Add flour to another big bowl. In a pot add the oil, bring oil to 350 degree. Take pieces of gator out of buttermilk mixture and dredge in flour mixture and add to oil. Using a slotted spoon stir gator around occasionally for even cooking. Cook until golden brown and crispy. Remove to a cooling rack or paper towel lined plate or cooling rack.
CK’s Gator Sauce
½ c mayo
1 roasted shallot, peeled and minced
2 cl roasted garlic, peeled and minced
1 ½ t yellow mustard
½ t Worcestershire sauce
½ t black pepper
2 t lemon juice
1/4 t salt
1/8 t cayenne powder
Mix all the ingredients in a bowl, cover and toss in refrigerator for 1 hour.
Gator Boy Sandwiches
4 six in French rolls or rolls of your choice, split
16 sl roma tomatoes
16 sl onions
4 t butter
ice berg lettuce
Extra hot sauce (optional)
Butter each roll, toast if desired. Add 1 t gator sauce to each side of rolls, add lettuce, tomato and onions. Add equal amount of gator nuggets to each sandwich. Close sandwiches and serve. Enjoy.
