Those two always play nice together. But the important thing here is the quality of your canned crushed tomatoes. They will make or break this particular dish. You can replace the chicken thighs with chicken breast of course.
You can also replace the cayenne pepper with black pepper or just go half and half. This dish can easily made in under 30 minutes.
Easy Chicken Cacciatore
5 boneless, skinless chicken thighs cut into 2 inch pieces
28 oz can quality crushed tomatoes
1 med onion chopped
½ bell pepper chopped
3 T olive oil
¼ t Cayenne pepper
1 t Salt
½ t Garlic Powder
1 ½ t Italian Seasoning
1 ¼ t sugar
Parmesan cheese, grated (for sprinkling over the top)
In large pan over medium heat add the chicken. Stir and cook until the chicken is almost done. Add the onions, peppers, sugar, cayenne pepper, salt, garlic powered and Italian seasoning. Stir and cook a few more minutes. Pour in the crushed tomatoes. Reduce heat and stir well. Place the lid on top and let mixture cook for 10 minutes. Serve easy chicken cacciatore over cooked pasta of your choice and sprinkle parmesan cheese over the top. In the video I used rotini. Enjoy.
