| Crispy Oatmeal Cookies Makes about 20 big cookies 1 ½ Instant oatmeal, plain or original flavor ½ cup brown sugar brown sugar ½ cup butter, softened ½ cup flour ¼ cup sugar 1 Tablespoon vegetable oil 1 Tablespoon water 1 ¼ teaspoon vanilla extract 1 teaspoon baking soda ½ teaspoon cinnamon Preheat oven to 350 degrees Fahrenheit. Prepare a baking sheet with silpat mat or parchment paper. In a large mixing bowl cream butter, brown sugar and regular sugar until lightened in color using an electric hand mixer. This should take about 2 minutes. Add flour, oatmeal, cinnamon, baking soda, water, and vegetable oil and mix those in with electric hand mixer. Everything should have a little moisture. Add vanilla extract and mix in. Grab prepared baking sheet and scoop dough in 2 Tablespoon measures and place on baking sheet about an inch apart. Do not flattened, the cookies will spread while baking. Bake cookies in preheated oven for 12-15 minutes. Just until they become a little darker in color. Do not over bake. Let cool in pan a few minutes before removing them to a cooling rack. The cookies will be soft at first but will crisp up while cooling. Enjoy. Peace, CK |
