Cookies and Cream Ice Cream
Serves 6
15 crushed Oreos
¾ c heavy whipping cream
¾ c half and half
4 egg yolks, lightly beaten
¾ c sugar
3 t vanilla extract
1/8 t salt
In bowl add sugar to egg yolks and whisk well.
Get a medium pot over low heat. Add half and half to the pot. Add egg and sugar mixture.
Stir this in really well. Heat until mixture gets hot but not boiling, stirring once in a while. Strain hot mixture into a bowl. Whisk in salt and vanilla. Cover bowl with plastic or top and refrigerate for 2 hours.
Remove from fridge and add to your Ice Cream maker according to your machines directions. Within the last few minutes of the churning add Oreo cookies crumbs. Or wait until churning is complete and then mix in cookies. Place ice cream in a freezer safe bowl, cover with plastic wrap and top and freeze for 4 hours. Enjoy.
Don’t have an Ice Cream Maker?
If you don’t have an Ice cream maker, chill the base like described above. Mix in cookies crumbs put in plastic container and cover it with plastic wrap. Every 15 – 20 minutes give it a stir until proper level of freezing as been achieved (it looks like and has the consistency of ice cream).
