1cup flour
¾ stick of butter
¾ c plus 2 T dark brown sugar
½ large egg (whisk 1 egg, then use 1/2 of it)
1 t baking soda
¼ t salt
1/8 t ground ginger
1/8 t ground cinnamon
Preheat the oven to 350°F. In a medium bowl mix whisk flour, salt, baking soda, cinnamon and ginger set aside. Add sugar and butter to mixer or use a handheld electric mixer.
Mix ingredients until smooth. Beat in the egg. Add the flour mixture to the sugar mixture until everything is combined.
Line a baking sheet with a silpat or parchment paper. Add rounded teaspoons of cookie dough to baking sheet 2 inches between each cookie. Bake off for 8-11 minutes rotating the pan halfway through baking.
Remove from oven. Remove right away to a cooling rack, wait a couple of minutes and move to an airtight container. Let baking sheet cool down before baking another batch. Enjoy.
