BBQ Cheeseburger
Serves 1
3 oz 80/20 Ground Beef
1 sesame seed hamburger bun, toasted
2 slices cooked bacon
1/2 ounce cheddar cheese, shredded or sliced
1/4 cup lettuce
3 onion rings, cooked (store bought or recipe below)
1/4 T bbq sauce
1 t ranch dressing (store bought or recipe below)
Mix ranch dressing with bbq sauce and set aside. Shape ground beef into patty and lightly salt both sides.
In a non stick pan under medium heat add burger patty, cook on one side for 2 minutes, flip and cook of about a minute longer. Pour BBQ sauce over patty, then the cheese.
Cover with lid and remove from heat. When the cheese has melted put the burger together. One the bottom bun add the lettuce, patty, bacon, onion rings and top. Serve with extra sauce on the side.
Ranch Dressing
serves 6-8
1 1/4 cups mayo
1/2 cup sour cream
1/4 cup heavy cream
2 tablespoons lemon juice
1/2 teaspoon dried dill weed
1/4 teaspoon garlic powder
1/4 t salt
pinch black pepper
Toss everything in a bowl and whisk until well combined.
Battered Onion Rings
Serves 2
3/4 c flour
3/4 c water
2 T corn starch = 1/4 t more
1/2 t salt
1/4 t black pepper
1/4 t baking soda
1/4 t baking powder
1 medium onion, sliced 1/4 inch thick
1/4 c flour for dredging
Oil for frying (1 inch deep)
Get a large pot under medium heat. In a bowl add, 3/4 c flour, corn starch, salt, pepper, baking soda, and baking powder. Whisk. Add mix and whisk until smooth. Set up a frying station with the remaining flour in a shallow dish. Dip onion slices in flour, then batter and then into the oil. Fry, turning often until golden brown and crispy. Remove to a cooling rack and sprinkle with salt. Enjoy.
