4 ciabatta rolls, halved
4 Chicken breast halves, flattened
¾ cup coleslaw
½ cup Pepper Jack, Shredded
½ cup Cheddar Cheese Blend, Shredded
4 slices tomato
4 slices bacon, cooked and drained
½ Avocado, scooped and sliced
2 Tablespoons mayonnaise
2 teaspoons Italian salad dressing mix
1 teaspoon Dijon mustard
Place a grill pan over medium heat. While the grill pan is heating up season both sides of chicken with Italian salad dressing mix. Mix all the cheeses together and set aside.
Mix Mayonnaise with Dijon mustard in a small bowl and set aside. Place chicken on grill until one side has nice deep grill marks. Flip chicken and add cheese on top.
Cook for about 1 minute, turn off heat and place a top over the chicken. This will melt the cheese. Toast ciabatta rolls if desired.
Place rolls on plate and remove top from grill pan. Add a piece of chicken to the bottoms of the rolls.
On the inside of the top rolls evenly spread mayonnaise and mustard mix. Break bacon slices in have and place 2 pieces on each piece of chicken. Add a slice of tomato over the bacon. Add a couple of avocado slices over the tomato. On the top side of bun add even amounts of coleslaw.
Close sandwich and serve right away. Enjoy.
