Beef and potato burritoBeef and Potato Burrito
Makes 8 burritos 2 large russet potatoes, diced small ¾ lb ground beef 8 six inch flour tortillas ½ cup shredded Mexican cheese blend ½ cup taco sauce ½ of 2 ounce can of slice black olives 2 Tablespoons fresh lime juice 1 Tablespoon Worcestershire sauce 1 serrano, or jalapeno pepper, sliced (optional) 1 teaspoon onion powder ½ teaspoon paprika ½ teaspoon salt ½ teaspoon garlic powder ¼ teaspoon black pepper Vegetable oil for frying potatoes Preheat oven to 375 degrees Fahrenheit. In a large brown the ground beef on over low heat. Once browned add taco sauce, serrano pepper, olives, lime juice. Next add the onion powder, garlic powder, black pepper, salt, and paprika. Stir and cook for 5 minutes. Taste for seasoning. Remove mixture to a bowl and set aside. Wipe out pan and add one inch vegetable and let it come up to 375 degrees. Fry potatoes until golden brown and crispy. Remove with a slotted spoon and sprinkle on a little salt. Add potatoes to bowl with meat and stir. Warm tortillas in microwave just until soft. Place on tortilla on a square of foil and add some filling, and top with cheese. Fold burrito, and wrap with foil do the same thing with remaining filling, cheese and tortillas. Place burrito packs on a baking sheet and bake for 15-20 minutes. Unwrap and enjoy. Peace, CK |
